I’ve been following Dan Hong, Chef of Mr. Wong, Ms. G and El Loco in Sydney, on Instagram for a long time, and always was in awe for his knowledge in food and talent as a chef.

But only after I met him earlier this year during a Pintxos run in San Sebastian, I fully grasped the depth of his passion.
